Established in 2012, Dr. Limon, founded by Chiclayo-born chef Carlos Brescia and partners Jose Antonio Combina and Fiorella Terrazas, was creatively designed to the theme of a medical institution. The story behind the name: Peruvian food, and most of Brescia’s dishes, revolve around the key ingredient of lime (limon in Spanish), which has high vitamin and antioxidant properties. The team believes this leaves diners feeling good after its consumption— the same feeling after a doctor’s visit.
